While Brussels sprouts are roasting, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy, about 10 minutes. Remove bacon to a paper towel-lined plate, reserving 1 tablespoon of bacon grease in the skillet. (10 minutes)

Once the bacon is cool enough to handle, crumble it into bite-sized pieces.

Remove Brussels sprouts from the oven and immediately transfer them to the skillet with the reserved bacon grease. Add the croutons, crumbled blue cheese, and red wine vinegar, then toss gently to combine all ingredients. (5 minutes)

For a vegetarian option, skip the bacon and use a tablespoon of olive oil or butter to sauté the Brussels sprouts in the skillet.
