For an extra layer of flavor, consider adding a tablespoon of butter to the skillet along with the vegetable oil. If you don't have fresh corn, you can use frozen corn kernels in a pinch. Just be sure to thaw them completely before adding them to the skillet. Feel free to adjust the amount of cayenne pepper to your liking. If you're not a fan of spice, you can omit it altogether. Maque Choux is traditionally served as a side dish, but it's also delicious served over rice or grits as a light main course. For a vegetarian version, omit the bacon and add a teaspoon of smoked paprika for a smoky flavor.

Oct 11, 2023The bacon adds such a great smoky flavor. I added a little bit of cream cheese at the end for extra creaminess – delicious!
