Cook the Sugar Mixture: In a nonstick saucepan over medium heat, combine the sugar, water, and golden syrup. Do not stir. Attach a candy thermometer to the side of the pan. Heat the mixture until it reaches 275 degrees F (135 degrees C), about 5 minutes.

Incorporate Walnuts and Flavorings: Once the sugar mixture reaches 275 degrees F (135 degrees C), add the toasted walnuts. Stir continuously with a silicone spatula until the mixture reaches 300 degrees F (150 degrees C), about 5 minutes more. Quickly stir in the butter, baking soda, smokehouse rub, and walnut extract.

Cool and Break: Remove the saucepan from heat and carefully pour the hot brittle mixture onto the prepared baking sheet. Allow it to cool completely before breaking it into smaller, delectable pieces, about 30 minutes.

A nonstick saucepan and silicone spatula are highly recommended to prevent sticking and ensure even stirring.
For a more intense smoky flavor, use smoked walnuts.
The smokehouse rub can be adjusted to taste, depending on your preference for smokiness.
Be very careful when working with hot sugar, as it can cause severe burns.
